		<description>Mmmm nothing like a good salad! Here are four easy go-to options.

1. Grilled Veggie Greek Salad.
Pick a few of your favorite vegetables or whatever is in season. I like summer squash, red peppers and zucchini but you can be pretty creative. Then cut up veggies, sprinkle with olive oil, salt &amp; pepper and grill (outdoor grill or an indoor griddle) for a few minutes till each side is slightly charred. Chop cucumbers, tomato&#039;s,  green onion and lettuce. Squeeze 1/2 a lemon or lime over the salad and sprinkle with a few crumbles of low-fat feta and your favorite olives. Serve with whole wheat pita.

2. Southwestern Cobb Salad
1 can black beans (drained and rinsed in cold water)
1/2 cup corn
grape tomato&#039;s
avocado
green onion
Cilantro
Grilled chicken
salt, pepper, lime and olive oil
Cut tomato&#039;s in half, and place in bowl with corn, beans and avocado. Finely chop cilantro and green onion and add to bowl. season with salt, pepper, olive oil and lime to taste and mix well. Place grilled chicken on top. 

3. Mediterranean Salad 
1 Jar marinated artichokes
1 heirloom tomato or any other kind
Fresh Buffalo Mozzarella
Arugula
1 jar Hearts of Palm  
green or black olives  
fresh basil and parsley
salt, pepper, olive oil and good balsamic vinegar
Assembly for this salad is super easy. Rough chop basil and parsley. Cut up hearts of palm cross ways, cut artichokes in half, slice up tomato, arrange in bowl with arugula. add mozzarella and season with salt, pepper olive oil and vinegar to taste. 

4. Summer Salad
1 fresh fig
grilled chicken breast
1 shallot
parsley 
Fresh pineapple 
Boston bibb lettuce
Sprouts (optional)
pistachios 
Chop shallots in half and sprinkle lightly with salt, allspice and olive oil and set on grill till both sides are slightly charred and caramelized. At the same time cut a few slices of fresh pineapple rounds till outsides a lightly browned and caramelized. set shallots and pineapple aside. Cut up lettuce, rough chop parsley and cut fig in quarters. Place lettuce in bowl/ plate. Arrange grilled chicken, pineapple, figs and shallots. top with parsley, sprouts and pistachios. add favorite dressing or lemon, olive oil salt and pepper to taste. 

We make these pretty frequently in my house (where healthy eating is a way of life for me and my boyfriend). Sometimes we prep the ingredients in advance and store separately with out dressing etc. so we can quickly put them together after a long work night or for lunch for work. We use olive oil, salt, pepper and lemon as our dressing of choice since its the most healthy (no crappy artificial ingredients etc.). Good luck!</description>
